This is one of those dishes that really is just a good idea with no hard and fast rules. I usually make it with chicken, poached, roasted or smoked but have also used leftover roast turkey from Christmas dinner. The raw vegetables can be varied to taste. Mango and cashews are constants and the dressing varies little. It can be made well ahead, transports well and is always a crowd pleaser.
1 chicken, roasted, smoked or steamed
1 mango
3/4 cup roasted cashew nuts
1/2 telegraph cucumber
2 spring onions
3 sticks celery
1 cup snow pea shoots
1/2 cup snow peas, finely sliced
1/2 cup chopped fresh coriander
Dressing:
1 cup natural yoghurt
2 tablespoons mango chutney
1 tablespoon curry powder
Salt, pepper, brown sugar, chilli powder
In a large bowl combine the meat from the chicken cut into bite sized chunks. Add the mango peeled and cut into bite sized pieces, the chopped cucumber and the celery, snow peas and spring onion finely sliced. Add the cashews, chopped coriander and snow pea shoots. Whisk the chutney and curry powder into the yoghurt and season to taste with salt, pepper, brown sugar and chilli. Toss the dressing through the salad and serve. Serves 6

Omg my husband ordered the coronation chicken sandwich when we were in Scotland this year. I love mayonnaise but I nearly gagged when I tried a bite!

I was inspired by an English sandwich filling called coronation chicken, which is cooked chicken mixed with mayonnaise and curry powder and is quite awful! I just knew it was a concept that was worthy of further development/ refinement. It is simply delicious
