Rational thought flies out the window when the seasonal price of limes plummets. I can’t resist the bulging green net bags priced under $4 per kilo. My behaviour is irrational. How many dinners using fresh lime can I make?
I believe this mad compulsion harks back to a time not so long ago when limes in Australia were expensive when in season and impossible to find the remainder of the time. My love of the fresh zingy flavour in cakes, curds, beverages and Thai food make them impossible to resist.
My favourite method of preserving limes is to make cordial. Based on my Mum’s formula for lemon cordial, I’ve pimped and preened this lime version to preserve the vibrant colour and intensify the delicious flavour so now, when there isn’t a bottle in the fridge, my pre dinner drink options feel limited.
It’s lime season right now, the price has hit rock bottom and I’ve been buying limes in bulk. The lime cordial is ready to drink, the spirits cupboard is bursting with gin and I just found an amazing website with lime cordial cocktail recipes. Gimlet
3 parts Gin (I used local Monsoon Gin from Bass and Flinders Distillery)
2 parts lime cordial
A twist of lime
Fill a shaker with ice cubes. Add all the ingredients. Stir and strain into a chilled cocktail glass.
Garnish with a twist of lime.
Monsoon Gin from the Bass and Flinders distillery on the Mornington Peninsula has an interesting twist of ginger and lemongrass on the palate, just perfect with lime cordial!

I love limes. Sadly, with the declining drug smuggling business in Mexico, the cartel found out a way to double the price of limes. 😮 Now, we get smaller limes for $0.79 per pound. 😦 We used to get the same limes 6 for $1.00. We use the zest and make limecello instead of limoncello. It’s great during the summer with cheap spumante. 🙂

You’ll love it in cocktails, the kids will love it just to gulp down when they have a raging thirst, it’s very refreshing and super deliciously zingy as only lime can be!

Lovely! I have an antique Roses Lime Cordial bottle that would be perfect for this. Do you know how difficult it is to grow limes? Can they be grown in pots? Thinking ahead for next year…
