Broccoli& Bacon pasta done 1Broccoli makes a light and luscious change to the usual tomato based pasta sauce. There is no waste at all, you use the stems and the tops. The sweet smokiness of the cheese and the bacon means it will even appeal to kids.


1 kg broccoli,

4 cloves garlic
olive oil
90 g smoked bacon
125g smoked cheese, grated
400g pasta
Sea salt and freshly ground pepper

Take the tops off the broccoli heads and separate into bite sized pieces. Set aside. Peel the broccoli stems and roughly chop. Peel the garlic cloves. Put the broccoli stems and garlic into a small pot of water, bring to the boil and simmer for 20 minutes.

While the broccoli is cooking bring a pot of water to the boil for the pasta.

When the broccoli stems are cooked Drain, then puree the stems and garlic with enough olive oil to make a sauce about the consistency of whipped cream. Season with sea salt and freshly ground pepper.

Roughly chop the bacon then sauté until crisp.

Shred the cheese.

Cook the pasta in boiling salted water and then add broccoli heads for the last 3 mins. Drain, the pasta, return to the pot, then toss through the sauce bacon and cheese. SERVES 4
