Sweet Corn….off the cob!

I first made this simple dish years ago, BK (before kids). It was the mid 70s and “casseroles” were cutting edge cuisine, dishes that were cooked in advance and reheated to be served.

In my hands this recipe has had many incarnations. The original recipe called for two cans of sweet corn kernels and a cup of cream, all very well then, but not ingredients I would choose now, so, this old favourite has grown healthier and fresher. It is neither quiche nor frittata, but a crunchy, sweet and savoury bake,  perfect for the fastidious grandkids who abhor chewing corn off the cob! It is yummy with  a tossed salad for a  light lunch.

Baked Sweet Corn,  v1.2012

3 fresh cobs of corn, kernels cut from the cobs

3 large eggs

¼ cup skimmed milk

½ cup dry breadcrumbs or cracker crumbs

6 short loin rashers of bacon, trimmed and diced

4 spring onions, sliced

Salt and pepper to taste

1 tomato slices

1 cup shredded swiss cheese

In a large bowl combine the corn, the eggs lightly whisked with the milk, the breadcrumbs, bacon and spring onions, then season with salt and freshly ground black pepper to taste. Spoon the mixture into 4 well greased, ovenproof, single serve dishes. Allow space for the mixture to rise a little. Top with  sliced tomato and shredded cheese. Bake at 180c for 30 – 40 minutes. Serves 4

    YUM! only just saw this post was on here….. I’ve been using corn fresh off the cob heaps at the moment, so I think i might have to do this version for us too 🙂 I’ll let you know how I go with it x
